Is a 10 inch Dobsonian too big for a beginner?

Not optically, but possibly physically. The optics are as simple as astronomy gets. The problem is that a 53 lb telescope in two pieces has to be stored somewhere convenient and carried a short distance, and beginners who underestimate that end up observing less than they would with an 8 inch. Be honest about the route from storage to sky.

What does 10 inches show that 8 inches does not?

Roughly 56 percent more light, which in practice means fainter galaxies become visible and the ones you could already see show more structure. Can I take photographs with it?

Short exposures of the Moon and planets, yes. Deep sky imaging, no, because the base does not track and the field rotates even if you nudge it manually. Deep sky imaging starts with an equatorial mount, not with a bigger mirror.

Will it fit in my car?

Measure before you buy. A 10 inch solid tube is around four feet long and needs to lie flat, and the base is a bulky square. Estate cars and hatchbacks with folded seats are usually fine. Small saloons frequently are not, which is the main argument for the collapsible Flextube version.
